Ingredients

Scale

Main Cake Ingredients:

  • 2 cups (250g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1 cup (225g) unsalted butter, softened
  • 4 large eggs
  • ½ cup (120ml) whole milk
  • 1 tsp vanilla extract
  • 1 tsp almond extract (optional, for flavor boost)
  • 2 tsp baking powder
  • ¼ tsp salt

Additional Ingredients:

  • 1½ cups (240g) mixed dried fruits (e.g. raisins, sultanas, chopped cherries, pineapple)
  • ¼ cup (30g) chopped nuts (like almonds or cashews) – optional
  • 2 tbsp (15g) flour (for coating fruits)

Instructions

  1. Cream the butter and sugar: In a bowl, cream the softened butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Mix in vanilla and almond extracts.
  2. Prepare the batter: In another bowl, whisk together flour, baking powder, and salt. Gradually add the dry ingredients into the wet mixture, alternating with milk. Mix until smooth.
  3. Add fruits and nuts: Toss the dried fruits and nuts in flour to prevent sinking. Gently fold them into the batter.
  4. Bake the cake: Grease and line a square pan. Pour in the batter, level the top, and tap the pan gently on the counter to release air bubbles. Bake at 160°C (320°F) for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  5. Cool and serve: Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Top with dried mixed fruits before slicing. Slice, serve, and enjoy!

Notes

  • For best results, soak the dried fruits in rum or fruit juice overnight for added flavor.
  • This cake can be stored in an airtight container for several days, allowing the flavors to meld and intensify.
