Shrimp and Ravioli

  • 1 cup heavy cream
  • 1 cup chicken broth

Instructions

  1. Cook the Ravioli: Bring a large pot of salted water to a boil. Add the cheese ravioli and cook according to package instructions until tender, usually around 4-5 minutes. Drain the ravioli and set aside to keep warm.
  2. Cook the Shrimp: Heat olive oil in a large skillet over medium-high heat. Add the peeled and deveined shrimp and cook for 2–3 minutes per side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
  3. Prepare the Creamy Tuscan Sauce: In the same skillet, add minced garlic and chopped sun-dried tomatoes. Sauté for 1–2 minutes until fragrant and the garlic is lightly golden. Add the baby spinach and cook until wilted, about 1-2 minutes.
  4. Make the Cream Sauce: Pour in the heavy cream and chicken broth. Stir well and bring the mixture to a gentle simmer over medium heat. Add grated Parmesan cheese and Italian seasoning, stirring continuously until the cheese melts and the sauce thickens to a smooth, creamy consistency. Season with salt and black pepper to taste.
  5. Combine Everything: Return the cooked shrimp to the skillet, then gently add the cooked ravioli. Toss everything carefully in the creamy Tuscan sauce to coat evenly and heat through for 1-2 minutes.
