This Italian Basil Chicken Cutlets recipe combines tender, juicy chicken with a flavorful tomato and creamy ricotta sauce infused with fresh basil and Parmesan. It’s a quick and elegant dish perfect for weeknight dinners or entertaining guests.

Ingredients

Scale

Chicken Cutlets

  • 4 boneless, skinless chicken cutlets
  • Salt and black pepper, to taste
  • 2 tbsp olive oil

Sauce

  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh basil leaves, chopped
  • 1/2 tsp red pepper flakes (optional)

Instructions

  1. Season and Cook Chicken: Season the chicken cutlets with salt and black pepper on both sides. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the chicken and cook for 4 to 5 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  2. Sauté Garlic and Tomatoes: In the same skillet, add the minced garlic and halved cherry tomatoes. Sauté for 3 to 4 minutes until the tomatoes begin to soften and release their juices, stirring occasionally to prevent burning.
  3. Prepare Creamy Ricotta Sauce: Reduce the heat to low and stir in the ricotta cheese, grated Parmesan, and red pepper flakes if using. Combine thoroughly until the sauce is smooth and creamy. Stir in the chopped fresh basil leaves, mixing to evenly distribute the flavor.
  4. Combine and Warm Through: Return the cooked chicken cutlets to the skillet, spooning the creamy tomato sauce over each piece. Let them cook together for 2 to 3 minutes to warm through and allow the flavors to meld.
  5. Serve: Serve the chicken cutlets immediately, garnished with extra basil leaves if desired for added freshness and color.

Notes

  • For a spicier kick, increase the red pepper flakes according to taste.
  • Use fresh cherry tomatoes for best flavor; canned tomatoes will alter the texture and taste.
  • If ricotta is unavailable, substitute with mascarpone or cream cheese for a similar creamy texture.
  • Serve with a side of crusty bread, pasta, or a fresh green salad to complete the meal.
  • Ensure chicken reaches an internal temperature of 165°F (74°C) for safe consumption.
