Ingredients

Scale

For the Herb-Roasted Chicken Thighs

  • 6 bone-in, skin-on chicken thighs
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh lemon juice

For the Creamy Mashed Potatoes

  • 2 lbs (900g) Yukon gold potatoes, peeled and cubed
  • 1/2 cup warm milk
  • 3 tablespoons butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Honey-Glazed Carrots

  • 1 lb (450g) carrots, peeled and sliced
  • 1 1/2 tablespoons olive oil
  • 2 tablespoons honey
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon fresh thyme or parsley (optional)

Instructions

  1. Prepare the Oven and Chicken: Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper. In a mixing bowl, combine olive oil, minced garlic, dried rosemary, dried thyme, paprika, salt, black pepper, and fresh lemon juice. Rub this herb mixture thoroughly all over the chicken thighs, ensuring each piece is well coated. Place them skin-side up on the prepared baking sheet.
  2. Roast the Chicken: Roast the chicken thighs in the preheated oven for 35-40 minutes, or until the skin is golden brown and crispy and the internal temperature reaches 75°C (165°F), indicating they are fully cooked.
  3. Cook the Potatoes: While the chicken roasts, bring a large pot of salted water to a boil. Add the peeled and cubed Yukon gold potatoes and cook for 15-18 minutes until they are fork-tender. Drain the potatoes thoroughly.
  4. Mash the Potatoes: Return the drained potatoes to the pot or place in a mixing bowl. Add butter, warm milk, salt, and black pepper. Mash the potatoes until smooth and creamy, adjusting seasoning to taste. Keep warm until serving.
  5. Prepare the Honey-Glazed Carrots: Heat olive oil in a skillet over medium heat. Add the sliced carrots and sauté for about 5 minutes. Drizzle honey over the carrots, then season with salt and black pepper. Continue cooking for an additional 6-8 minutes until the carrots are tender and fully glazed. Optionally, stir in fresh thyme or parsley for added flavor.
  6. Serve the Meal: Plate the herb-roasted chicken thighs on a bed of creamy mashed potatoes. Add a generous portion of honey-glazed carrots on the side. Garnish with additional fresh herbs if desired and serve immediately for a delicious, comforting meal.

Notes

  • Ensure chicken thighs are cooked to an internal temperature of 75°C (165°F) for safe consumption.
  • For creamier mashed potatoes, warm the milk before adding.
  • Use fresh herbs like thyme or parsley to enhance the flavor and presentation.
  • Honey glazing adds a natural sweetness to balance the savory elements.
  • Leftovers can be stored in the refrigerator for up to 3 days.
