Ingredients

Scale

For the Grilled Shrimp

  • 1 lb (450 g) large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • Juice of ½ lemon
  • ½ tsp smoked paprika
  • ¼ tsp salt
  • ¼ tsp black pepper

For the Caesar Dressing

  • ½ cup mayonnaise
  • 2 tbsp grated Parmesan cheese
  • 1 tsp Dijon mustard
  • 1 tsp lemon juice
  • 1 tsp Worcestershire sauce
  • 1 clove garlic, minced
  • Salt and pepper to taste

For Assembly

  • 4 large flour tortillas or wraps
  • 2 cups chopped romaine lettuce
  • ¼ cup grated Parmesan cheese
  • Croutons, optional for crunch

Instructions

  1. Prep the Shrimp: In a bowl, toss the peeled and deveined shrimp with olive oil, minced garlic, lemon juice, smoked paprika, salt, and black pepper until evenly coated to infuse flavor.
  2. Grill the Shrimp: Preheat your grill or grill pan to medium-high heat. Place the shrimp on the grill and cook for 2–3 minutes per side until they turn pink and develop a slight char for that smoky taste. Remove from heat and set aside.
  3. Make the Caesar Dressing: In a small bowl, whisk together mayonnaise, grated Parmesan cheese, Dijon mustard, lemon juice, Worcestershire sauce, minced garlic, salt, and pepper until smooth and creamy.
  4. Prepare the Wraps: Warm the flour tortillas slightly to make them more pliable. Spread a thin, even layer of the Caesar dressing over each tortilla.
  5. Assemble the Wraps: Layer chopped romaine lettuce, the grilled shrimp, additional grated Parmesan, and croutons if desired on each tortilla. Roll the wraps tightly to enclose all ingredients.
  6. Serve: Slice the wraps in half diagonally for easy eating and serve immediately to enjoy the fresh, zesty flavors at their best.

Notes

  • For a low-carb option, substitute flour tortillas with large lettuce leaves or low-carb wraps.
  • Ensure the shrimp is thoroughly deveined and peeled for the best texture and taste.
  • Adjust the amount of smoked paprika and garlic to suit your spice preference.
  • Make the dressing ahead and refrigerate for up to 2 days for convenience.
  • Adding croutons is optional but recommended for extra crunch.
  • To keep wraps from getting soggy, assemble just before serving.
