For the Beef Stir-Fry

  • 1 lb (450 g) beef sirloin or flank steak, thinly sliced
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • Salt and black pepper to taste

For the Vegetables

  • 2 medium zucchini, sliced into half-moons
  • 1 cup cherry tomatoes, halved
  • ½ red onion, thinly sliced
  • 1 bell pepper, thinly sliced

For Garnish & Flavor

  • ¼ cup crumbled feta cheese
  • 2 tbsp chopped fresh parsley or basil
  • Optional: squeeze of fresh lemon juice

Instructions

  1. Cook the Beef: Heat 1 tbsp olive oil in a large skillet or wok over high heat. Add the thinly sliced beef and season with smoked paprika, dried oregano, salt, and black pepper. Stir-fry the beef for 3–4 minutes until it is browned but still tender and juicy. Remove the beef from the skillet and set aside.
  2. Sauté the Vegetables: To the same skillet, add the remaining 1 tbsp olive oil. Add minced garlic, thinly sliced red onion, and bell pepper. Sauté for about 2 minutes until they start to soften. Then add the sliced zucchini and halved cherry tomatoes. Cook for an additional 3–4 minutes until the vegetables are tender-crisp.
  3. Combine Beef and Veggies: Return the cooked beef to the skillet with the sautéed vegetables. Toss everything together and heat through for 1–2 minutes, allowing the flavors to meld. Taste and adjust seasoning with additional salt and black pepper if needed.
  4. Finish and Serve: Transfer the stir-fry to a serving dish. Sprinkle the dish evenly with crumbled feta cheese and chopped fresh parsley or basil. Optionally, add a squeeze of fresh lemon juice to brighten the flavors. Serve immediately while hot.
