Cookies
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 large egg yolk
- 1/2 tsp vanilla extract
- 1 cup all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1/4 tsp salt
Ganache Filling
- 1/2 cup semi-sweet chocolate chips or chopped chocolate
- 2 tbsp heavy cream
- Preheat and Prepare: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking and aid easy cleanup.
- Make the Dough: In a bowl, cream the softened butter and granulated sugar together until light and fluffy. Then mix in the egg yolk and vanilla extract. In a separate bowl, whisk together the all-purpose flour, unsweetened cocoa powder, and salt. Gradually add the dry ingredients to the wet mixture and combine until a soft dough forms.
- Shape the Cookies: Scoop the dough into 1-tablespoon portions and roll each into a ball. Place them evenly on the prepared baking sheet. Gently press your thumb or the back of a spoon into the center of each ball to create an indentation for the ganache filling.
- Bake: Bake the cookies for 10 to 12 minutes until set. If the indentations have risen during baking, gently press them again immediately after removing from the oven. Allow the cookies to cool completely on a wire rack.
- Prepare Ganache: Heat the heavy cream just until steaming, then pour it over the semi-sweet chocolate chips. Let it sit for 1 to 2 minutes to soften the chocolate, then stir gently until smooth and glossy.
- Fill the Cookies: Spoon or pipe the prepared ganache into the cooled indentations of each cookie. Let them set at room temperature or chill briefly in the refrigerator to firm up the filling before serving.
Notes
- Use softened butter to ensure smooth creaming with sugar.
- You can substitute semi-sweet chocolate with dark chocolate for a richer ganache.
- For a festive touch, sprinkle a pinch of sea salt over the ganache before it sets.
- Store cookies in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness.
