Ingredients

Scale

For the Chicken

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste

For the Bowl

  • 1 cup cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh parsley, chopped

Garlic Herb Feta & Tzatziki Sauce

  • 1/2 cup Greek yogurt
  • 1/4 cup feta cheese, crumbled
  • 1 clove garlic, minced
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1 tablespoon fresh dill, chopped
  • Salt and black pepper to taste

Instructions

  1. Preheat and Season: Preheat a skillet over medium-high heat. Meanwhile, season the boneless chicken breasts with olive oil, dried oregano, garlic powder, paprika, salt, and black pepper evenly on both sides.
  2. Cook Chicken: Place the seasoned chicken breasts in the hot skillet and cook for 5 to 6 minutes per side, or until the chicken is golden brown and fully cooked through. Remove from heat and let the chicken rest for a few minutes before slicing it into strips.
  3. Prepare Sauce: In a small bowl, combine Greek yogurt, crumbled feta cheese, minced garlic, lemon juice, olive oil, fresh chopped dill, salt, and black pepper. Mix thoroughly until the sauce is creamy and well blended.
  4. Assemble Bowls: Start by placing the cooked quinoa as the base in each serving bowl. Arrange sliced chicken breast, cherry tomatoes, diced cucumber, thinly sliced red onion, Kalamata olives, and crumbled feta cheese on top neatly.
  5. Drizzle and Garnish: Generously drizzle the garlic herb feta tzatziki sauce over the assembled ingredients. Finally, garnish with freshly chopped parsley and serve immediately for a fresh, flavorful meal.

Notes

  • For added protein, consider topping with a boiled egg or chickpeas.
  • Quinoa can be substituted with couscous or bulgur wheat for a different texture.
  • Adjust garlic and lemon juice in the sauce to taste depending on preference.
  • Leftover chicken slices and sauce can be refrigerated separately for up to 3 days.
  • Serve with warm pita bread for a complete Mediterranean experience.
