Ingredients

Scale

Chocolate Cupcakes:

  • 1 cup all-purpose flour
  • ½ cup cocoa powder
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ cup vegetable oil
  • ¾ cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup buttermilk
  • ½ cup hot water

Filling & Frosting:

  • 12 Ferrero Rocher chocolates
  • ½ cup Nutella
  • 1 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 2 tbsp cocoa powder
  • 1 tbsp heavy cream (if needed)

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners to prevent sticking and make cleanup easier.
  2. Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, cocoa powder, baking soda, and salt to evenly distribute the leavening agents and cocoa powder.
  3. Combine Wet Ingredients: In another bowl, beat the vegetable oil, sugar, eggs, and vanilla extract until smooth and creamy. Then alternately add the buttermilk and the dry ingredients mixture to the wet mixture, mixing well after each addition. Finally, stir in the hot water carefully to create a smooth batter.
  4. Fill Cupcake Liners and Bake: Divide the batter evenly among the cupcake liners, filling each about ¾ full. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted in the center comes out clean. Allow cupcakes to cool completely on a wire rack.
  5. Core and Fill Cupcakes: Using a small knife or a cupcake corer, cut out the center of each cooled cupcake to create a hollow space. Fill each hollow with about a teaspoon of Nutella for a decadent surprise.
  6. Prepare Frosting: Beat the softened unsalted butter until creamy using an electric mixer. Gradually add powdered sugar, cocoa powder, and Nutella while continuing to beat until the frosting is smooth and fluffy. If the frosting is too thick, add heavy cream a tablespoon at a time until you reach the desired consistency.
  7. Frost and Decorate: Pipe the chocolate Nutella frosting generously onto each cupcake. Top each cupcake with a whole Ferrero Rocher chocolate for an elegant and delicious finishing touch.
