5 from 10 reviews

A delicious and nutritious dish featuring caramelized sweet potatoes roasted to perfection with a blend of spices, topped with creamy feta cheese, crunchy walnuts, and a sweet honey drizzle with a hint of lemon and chili. Garnished with fresh herbs, this recipe is perfect as a warm side or a light main course.

Ingredients

Scale

For the Sweet Potatoes

  • 2 large sweet potatoes, peeled and cubed
  • 3 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon cinnamon (optional)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

For the Topping

  • 1/3 cup feta cheese, crumbled
  • 1/3 cup walnuts, roughly chopped

For the Honey Drizzle

  • 2 tablespoons honey
  • 1 teaspoon lemon juice
  • Pinch of chili flakes (optional)

For Garnish

  • Fresh parsley or thyme

Instructions

  1. Preheat Oven: Preheat your oven to 200°C (400°F) and line a baking tray with parchment paper to prevent sticking and make cleanup easier.
  2. Prepare Sweet Potatoes: In a large bowl, toss the peeled and cubed sweet potatoes with olive oil, paprika, cinnamon (if using), salt, and black pepper until the cubes are evenly coated with the spices and oil.
  3. Roast Sweet Potatoes: Spread the seasoned sweet potatoes in a single layer on the prepared baking tray. Place them in the oven and roast for 30 to 35 minutes, flipping halfway through to ensure even caramelization and tender texture.
  4. Make Honey Drizzle: While the sweet potatoes roast, combine honey, lemon juice, and a pinch of chili flakes (if desired) in a small bowl and mix well to create a flavorful drizzle.
  5. Assemble the Dish: Once the sweet potatoes are roasted and caramelized on the edges, transfer them to a serving dish. Sprinkle crumbled feta cheese and chopped walnuts evenly over the top.
  6. Drizzle and Garnish: Generously drizzle the honey mixture over the sweet potatoes, feta, and walnuts. Garnish with fresh parsley or thyme leaves for a burst of color and freshness.
  7. Serve: Serve the dish warm as a comforting side or a light main course.

Notes

  • You can omit cinnamon if you prefer a less sweet spice flavor.
  • For a nut-free version, omit walnuts or substitute with toasted pumpkin seeds.
  • Adjust chili flakes in the honey drizzle to your spice preference.
  • This dish pairs well with grilled meats or a fresh green salad.
  • Leftovers can be refrigerated and enjoyed cold or reheated within 2 days.
