Ingredients

Scale

For the Pastry

  • 1 sheet puff pastry, thawed
  • 68 oz brie cheese, sliced
  • 1/2 cup dried cranberries
  • 1/2 cup walnuts, roughly chopped
  • 1 tablespoon honey
  • 1 egg, beaten (for egg wash)

For the Glaze

  • 2 tablespoons honey
  • 1 tablespoon orange juice or water
  • Pinch of cinnamon (optional)

For Garnish

  • Fresh thyme or rosemary
  • Powdered sugar (optional, for a sweet finish)

Instructions

  1. Preheat Oven: Preheat your oven to 200°C (400°F) and line a baking tray with parchment paper to prevent sticking and ensure even cooking.
  2. Prepare the Pastry: Roll out the thawed puff pastry slightly on a clean surface, then place it on the prepared baking tray.
  3. Add Fillings: Arrange the sliced brie cheese neatly in the center of the pastry, leaving a border around the edges to fold over later. Sprinkle the dried cranberries and roughly chopped walnuts on top of the brie.
  4. Drizzle Honey: Drizzle 1 tablespoon of honey evenly over the cranberries and walnuts to add sweetness and help bind the ingredients together.
  5. Fold Edges: Carefully fold the edges of the pastry slightly over the filling to create a rustic crust, leaving the center exposed.
  6. Apply Egg Wash: Brush the exposed edges of the pastry with the beaten egg to create a glossy, golden finish when baked.
  7. Bake: Place the tray in the oven and bake for 18–22 minutes, or until the pastry is puffed, golden brown, and flaky.
  8. Make the Glaze: While baking, mix 2 tablespoons honey with 1 tablespoon orange juice or water and a pinch of cinnamon (if using) in a small bowl to make a flavorful glaze.
  9. Glaze the Pastry: After removing the pastry from the oven, drizzle the honey glaze over the baked puff pastry to add moisture and shine.
  10. Garnish and Serve: Garnish with fresh thyme or rosemary for an aromatic touch. Optionally, sprinkle with powdered sugar for a sweeter finish. Serve warm as a tasty appetizer or dessert.

Notes

  • Ensure the puff pastry is fully thawed before rolling to avoid cracking.
  • Use good quality brie for the best flavor and creamy texture.
  • To toast walnuts, dry roast them in a pan over medium heat for 3–5 minutes until fragrant before adding.
  • You can substitute orange juice with water if preferred, though orange juice adds a nice citrus brightness.
  • Powdered sugar is optional and adds a lovely sweet contrast if serving as a dessert.
  • This recipe can be prepared ahead and glazed just before serving to keep the pastry crisp.
