Ingredients

Scale

Chicken Souvlaki

  • 2 large chicken breasts, cut into cubes
  • 3 tablespoons olive oil
  • Juice of 1 lemon
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Feta Dip

  • 4 oz feta cheese
  • 1/3 cup Greek yogurt
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 clove garlic
  • Pinch of salt
  • 23 tablespoons water (to thin if needed)

Grazing Board

  • 23 pita breads or flatbreads
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 1/2 cup olives
  • 1/2 cup roasted red peppers
  • 1/4 cup feta cheese, crumbled
  • Fresh parsley, chopped
  • Lemon wedges

Instructions

  1. Marinate the Chicken: In a bowl, combine olive oil, lemon juice, minced garlic, dried oregano, paprika, ground cumin, salt, and black pepper. Add the cubed chicken breasts and toss until all pieces are evenly coated. Let the chicken marinate for 20 to 30 minutes to absorb the flavors.
  2. Cook the Chicken: Thread the marinated chicken cubes onto skewers or place them directly into a grill pan. Cook over medium-high heat for 8 to 10 minutes, turning occasionally, until the chicken is golden brown and fully cooked through.
  3. Prepare the Feta Dip: In a blender or bowl, combine feta cheese, Greek yogurt, olive oil, lemon juice, a clove of garlic, and a pinch of salt. Blend or whisk until the mixture is smooth and creamy. Add 2 to 3 tablespoons of water to achieve the desired consistency.
  4. Warm the Pita Bread: Lightly warm the pita breads or flatbreads in a skillet or oven until they are soft and slightly toasted, perfect for wrapping or dipping.
  5. Assemble the Grazing Board: On a large serving board, arrange the grilled chicken skewers or pieces prominently. Place the bowl of feta dip in the center. Surround with warmed pita bread, halved cherry tomatoes, sliced cucumber, thinly sliced red onion, olives, roasted red peppers, and crumbled feta cheese.
  6. Garnish and Serve: Sprinkle fresh chopped parsley over the board and add lemon wedges for squeezing. Serve immediately for a vibrant, shareable, and flavorful meal experience.

Notes

  • For a smoky flavor, cook the chicken over a charcoal grill if available.
  • Ensure the chicken pieces are uniform in size for even cooking.
  • Adjust the feta dip consistency by adding more or less water as you prefer.
  • Use gluten-free flatbread or pita to make this recipe gluten-free.
  • This grazing board is best served fresh; however, leftovers can be stored in the refrigerator for up to 2 days.
