Ingredients

Scale

Nuts and Fruits

  • 1 cup almonds, toasted and chopped
  • 1 cup hazelnuts, toasted and chopped
  • 1 cup dried figs, chopped
  • 1 cup candied orange peel, chopped

Dry Ingredients

  • 1 cup all-purpose flour
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp cocoa powder
  • A pinch of ground cloves
  • A pinch of salt

Syrup and Topping

  • 1 cup sugar
  • 1 cup honey
  • Powdered sugar, for dusting

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 325°F (160°C) and line a 9-inch springform pan with parchment paper, lightly greased to prevent sticking.
  2. Mix Nuts and Fruits: In a large bowl, combine the toasted almonds, hazelnuts, chopped dried figs, and candied orange peel, ensuring an even distribution.
  3. Sift Dry Ingredients: In a separate bowl, sift together the all-purpose flour, cinnamon, nutmeg, cocoa powder, ground cloves, and salt to blend the spices evenly.
  4. Combine Mixtures: Stir the dry flour and spice mixture into the nut and fruit mixture until all pieces are well coated and mixed uniformly.
  5. Make Syrup: In a small saucepan over medium heat, combine sugar and honey. Stir continuously until the sugar dissolves completely. Bring mixture to a boil, then simmer for about 2 minutes until slightly thickened but still pourable.
  6. Combine Syrup with Mixture: Carefully pour the hot syrup over the nut and fruit mixture. Quickly and thoroughly mix to ensure the syrup coats everything well, making the mixture sticky and cohesive.
  7. Transfer to Pan and Bake: Transfer the sticky mixture into the prepared pan, pressing it down evenly to form a compact layer. Bake in the preheated oven for about 35 minutes until the edges start to pull away from the pan slightly, indicating doneness.
  8. Cool and Finish: Remove from oven and allow to cool completely in the pan. Once cooled, release the springform, dust the top generously with powdered sugar, and slice into wedges to serve.

Notes

  • Toast the nuts before chopping to enhance their flavor and texture.
  • Use fresh spices for the best aromatic results.
  • Press the mixture firmly in the pan to ensure Panforte holds its shape when sliced.
  • Allow Panforte to cool completely before slicing to avoid crumbling.
  • Store leftover Panforte in an airtight container; it can last up to two weeks stored in a cool, dry place.
