Ingredients

Scale

For the Chicken

  • 2 large chicken breasts, sliced or cubed
  • 3 tablespoons olive oil
  • Juice of 1 lemon
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

For the Spicy Yogurt Sauce

  • 1/2 cup Greek yogurt
  • 12 teaspoons hot sauce (to taste)
  • 1 clove garlic, finely grated
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • Pinch of salt
  • 23 tablespoons water (to thin if needed)

For the Bowl Base

  • 2 pita breads, cut into pieces or lightly toasted
  • 1 cup cooked rice or quinoa (optional)

For the Toppings

  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/2 cup shredded lettuce or spinach
  • 1/4 cup olives (optional)
  • 1/4 cup crumbled feta
  • Fresh parsley, chopped

Instructions

  1. Marinate the Chicken: In a bowl, combine olive oil, lemon juice, minced garlic, dried oregano, paprika, ground cumin, salt, and black pepper. Add the sliced or cubed chicken breasts and mix well to coat. Allow to marinate for 20–30 minutes to infuse the flavors.
  2. Cook the Chicken: Heat a skillet or grill pan over medium-high heat. Cook the marinated chicken for 8–10 minutes, turning occasionally until golden brown and fully cooked through.
  3. Prepare the Spicy Yogurt Sauce: In a separate bowl, whisk together Greek yogurt, hot sauce, finely grated garlic, lemon juice, olive oil, a pinch of salt, and water (add 2–3 tablespoons as needed) until the sauce is smooth and creamy.
  4. Toast the Pita: Lightly toast the pita bread pieces until they are warm and slightly crisp to add texture to the bowl.
  5. Assemble the Bowl Base: Place the toasted pita pieces and, if using, cooked rice or quinoa at the bottom of your serving bowls.
  6. Add Chicken: Spoon the cooked chicken evenly over the pita and grains base.
  7. Layer the Toppings: Arrange halved cherry tomatoes, diced cucumber, thinly sliced red onion, shredded lettuce or spinach, olives (if using), and crumbled feta on top of the chicken layer.
  8. Drizzle Sauce and Garnish: Generously drizzle the spicy yogurt sauce over the assembled ingredients, then garnish with freshly chopped parsley.
  9. Serve: Serve the Mediterranean Chicken Pita Bowl immediately to enjoy the fresh and vibrant flavors at their best.

Notes

  • You can substitute chicken breasts with chicken thighs for juicier meat.
  • Adjust the amount of hot sauce in the yogurt for desired spice level or omit for milder taste.
  • Quinoa makes a great gluten-free option if avoiding pita or gluten.
  • Leftovers can be stored separately and assembled fresh to prevent sogginess.
  • Add a squeeze of extra lemon juice before serving for added brightness.
