  • 1 clove garlic
  • 23 tablespoons water
  • Pinch of salt

For the Grazing Board

  • 23 pita breads or flatbreads
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 1/2 cup olives
  • 1/2 cup roasted red peppers
  • 1/2 cup grilled or roasted vegetables (zucchini, eggplant, peppers)
  • 1/4 cup feta cheese, crumbled
  • Fresh herbs (parsley, mint)
  • Lemon wedges

Instructions

  1. Prepare the Hummus: Blend the canned chickpeas, tahini, olive oil, lemon juice, garlic, salt, and 2 to 4 tablespoons of water in a food processor until smooth and creamy, adjusting the water to your desired consistency.
  2. Make the Tzatziki: In a bowl, mix together Greek yogurt, finely grated and drained cucumber, minced garlic, lemon juice, olive oil, fresh or dried dill, and salt until well combined and creamy.
  3. Prepare the Whipped Feta Dip: Blend the feta cheese, Greek yogurt, olive oil, lemon juice, garlic, 2 to 3 tablespoons of water, and a pinch of salt until smooth and fluffy.
  4. Warm the Pita Breads: Heat the pita breads or flatbreads until soft and slightly toasted, either in a dry skillet, oven, or toaster.
  5. Assemble the Grazing Board: Arrange the prepared dips in small bowls and place them on a large serving board. Surround the dips with warmed pita bread, cherry tomatoes, sliced cucumber, red onion, olives, roasted red peppers, grilled or roasted vegetables, and crumbled feta cheese.
  6. Garnish and Serve: Sprinkle fresh parsley and mint leaves over the board and add lemon wedges around the edge. Serve immediately as a colorful and shareable platter perfect for entertaining or a light meal.
