For the Mezze Board

  • 4 pita breads, warmed
  • 1 cup cherry tomatoes
  • 1 cup cucumber slices
  • 1/2 cup kalamata olives
  • 1/4 cup roasted red peppers
  • 1/4 cup hummus
  • Fresh herbs (parsley, dill, mint)

Instructions

  1. Marinate the Chicken: In a bowl, combine olive oil, lemon juice, minced garlic, dried oregano, paprika, salt, and black pepper. Add the cubed chicken breasts to the marinade and toss well to coat. Cover and refrigerate for at least 30 minutes to allow the flavors to infuse.
  2. Prepare and Grill the Skewers: Thread the marinated chicken pieces onto wooden skewers that have been soaked in water to prevent burning. Preheat the grill to medium-high heat and cook the skewers for 10–12 minutes, turning occasionally, until the chicken is fully cooked through and has a slightly charred, smoky exterior.

  4. Warm the Pita Breads: Gently warm the pita breads in a dry skillet or oven until soft and pliable, ideal for wrapping or dipping.
  5. Assemble the Mezze Board: Arrange the warm pita breads on a large serving board. Place the grilled chicken skewers at the center or side of the board. Arrange cups or small piles of cherry tomatoes, cucumber slices, kalamata olives, roasted red peppers, and hummus around the chicken for variety and color.
