For the Olive Mix

  • 1 cup mixed olives (green, black, Kalamata)
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice
  • 1/2 teaspoon dried oregano
  • 1 clove garlic, lightly crushed
  • Pinch of chili flakes (optional)

For the Grazing Platter

  • 23 pita breads or flatbreads, warmed and cut
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 1/2 cup roasted red peppers
  • 1/4 cup crumbled feta
  • Fresh parsley or mint
  • Lemon wedges

Instructions

  1. Marinate the Chicken: In a bowl, combine olive oil, lemon juice, minced garlic, oregano, paprika, cumin, salt, and pepper. Add the chicken cubes to the marinade, mix well, and let it marinate for 20–30 minutes to absorb the flavors.
  2. Grill the Chicken: Thread the marinated chicken onto skewers or place in a grill pan over medium-high heat. Grill for 8–10 minutes, turning occasionally, until the chicken is golden brown and cooked through.
  3. Prepare the Feta Dip: In a blender or bowl, combine feta cheese, Greek yogurt, olive oil, lemon juice, garlic, and a pinch of salt. Blend or whisk together until smooth and creamy. Add 2–3 tablespoons of water as needed to thin the dip to desired consistency.
  4. Make the Olive Mix: In a bowl, combine mixed olives with olive oil, lemon juice, dried oregano, crushed garlic clove, and optional chili flakes. Stir well and let it marinate for 15–20 minutes to enhance the flavors.
  5. Warm the Pita Breads: Heat pita or flatbreads until they are soft and lightly toasted, then cut them into wedges for serving.
  6. Assemble the Platter: Arrange the grilled chicken souvlaki on a large serving platter. Place small bowls with the feta dip and olive mix on the platter. Surround with warmed pita wedges, halved cherry tomatoes, sliced cucumber, thinly sliced red onion, roasted red peppers, crumbled feta, fresh parsley or mint, and lemon wedges.
