Ingredients

Scale

For the Chicken Souvlaki

  • 2 large chicken breasts, cut into cubes
  • 3 tablespoons olive oil
  • Juice of 1 lemon
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

For the Herb Feta Dip

  • 4 oz feta cheese
  • 1/3 cup Greek yogurt
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 clove garlic
  • 1 tablespoon fresh parsley
  • 1 teaspoon fresh dill (or 1/2 teaspoon dried)
  • Pinch of salt

For the Mezze Board

  • 23 pita breads or flatbreads
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 1/2 cup olives
  • 1/2 cup roasted red peppers
  • 1/4 cup feta cheese, crumbled
  • Fresh herbs for garnish
  • Lemon wedges

Instructions

  1. Marinate the Chicken: In a bowl, combine olive oil, lemon juice, minced garlic, dried oregano, paprika, ground cumin, salt, and black pepper. Add the cubed chicken breasts and toss well to ensure all pieces are evenly coated. Cover and marinate for 20 to 30 minutes to infuse the flavors.
  2. Grill the Chicken: Thread the marinated chicken cubes onto skewers or place directly in a grill pan. Cook over medium-high heat for 8 to 10 minutes, turning occasionally, until the chicken is golden brown and fully cooked through.
  3. Prepare the Herb Feta Dip: In a blender or food processor, combine feta cheese, Greek yogurt, olive oil, lemon juice, garlic, fresh parsley, dill, and a pinch of salt. Blend until the mixture is smooth and creamy. Transfer to a serving bowl.
  4. Warm the Pita Breads: Heat the pita breads in a warm oven or on a skillet until soft and slightly toasted for added texture and warmth.
  5. Assemble the Mezze Board: On a large serving board, arrange the grilled chicken souvlaki skewers prominently. Place the herb feta dip bowl at the center of the board. Surround with warm pita bread, cherry tomatoes, sliced cucumber, thinly sliced red onion, olives, roasted red peppers, and crumbled feta cheese.
  6. Garnish and Serve: Sprinkle fresh herbs over the board and add lemon wedges for squeezing. Serve the mezze board immediately to enjoy the fresh, vibrant, and diverse Mediterranean flavors.

Notes

  • You can substitute chicken breasts with chicken thighs for a juicier texture.
  • If wooden skewers are used, soak them in water for 30 minutes before grilling to prevent burning.
  • The herb feta dip can be made a few hours ahead and chilled to enhance flavors.
  • Use a mix of olives (Kalamata and green) for variety in taste and color.
  • For a gluten-free option, serve with gluten-free flatbreads or fresh vegetable sticks instead of pita.
  • Adjust the spices in the marinade according to your spice preference.
