For the Mezze Board

  • 23 pita breads or flatbreads
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 1/2 cup olives
  • 1/2 cup roasted red peppers
  • 1/4 cup feta cheese, crumbled
  • Fresh parsley, chopped
  • Lemon wedges

Instructions

  1. Marinate the Chicken: In a bowl, combine olive oil, lemon juice, minced garlic, dried oregano, paprika, ground cumin, salt, and black pepper. Add the cubed chicken breasts and toss well to coat all pieces evenly. Cover and let marinate for 20–30 minutes to absorb all the flavors.
  2. Grill the Chicken: Preheat a grill pan or prepare skewers. Grill the marinated chicken over medium-high heat for 8–10 minutes, turning occasionally, until the chicken is golden brown on the outside and fully cooked through.
  3. Prepare the Lemon Feta Dip: In a blender or mixing bowl, combine feta cheese, Greek yogurt, olive oil, lemon juice, lemon zest, garlic clove, and a pinch of salt. Blend or whisk until smooth and creamy. Add water gradually to achieve a dip consistency if needed.
  4. Warm the Pita Breads: Heat pita breads or flatbreads until soft and lightly toasted, either in an oven or on a pan, making them pliable and warm for serving.
  5. Assemble the Mezze Board: Arrange the grilled chicken on a large serving board. Place the lemon feta dip in a small bowl at the center. Surround with warm pita bread, halved cherry tomatoes, sliced cucumber, thinly sliced red onion, olives, roasted red peppers, and crumbled feta cheese.
